I’M sharing apoem of mine published by Kasingkasing Press for its Langka poetry folio. The chapbook is set to be launched today at the Cebu Zine Fest, an annual festival dedicated to celebrating and promoting DIY publishing and alternative media, to be held at the Gallery, in Mandaue City, Cebu.

Kadyos, baboy, langka –

rolls off the tongue like a prayer.

 

Most of mother’s recipes start with

a few cloves of garlic and the onions

I have learned to cut without shedding

a tear, all strewn into a hot pan with oil.

 

But kadyos, baboy, langka asks

for ingredients to be dropped into

boiling water in specific succession,

almost like a ritual– a small offering.

 

I’ve always wondered why you

never learned how to cook,

and why you never say grace

before every meal.

 

Perhaps you don’t have

the patience, or the faith,

to leave pork to simmer

for half an hour before

adding kadyos and then

langka and batwan last

– you’ve never really been

one to appreciate what’s
