BACOLOD City – The Provincial Veterinary Office (PVO) of Negros Occidental is offering 200 heads of fattened sheep for sale as it targets to supply lamb meat to high-end market.

“Negros Occidental has enough stocks of sheep,” said Dr. Renante Decena, provincial veterinarian.

The PVO earmarked 200 heads for distribution. These included 100 heads at the Negros First Ranch in Murcia, 15 heads at Northern Negros State College of Science and Technology, and 85 in multiplier farms of Hinigaran and Sagay City.

As part of its efforts to boost the province’s lamb sector, the PVO recently featured a lamb meat processing and cooking demonstration at the Livestock and Dairy Fair in the 24th Panaad Sa Negros Festival.

The demo, led by two chef instructors and four culinary students of the Bacolod Academy for Culinary Arts, was joined by paraveterinaries from the cities of Talisay, Silay and Victorias and town of E.B. Magalona, and public school teachers.

Decena said that with its higher cost, lamb meat is positioned for high-end market consumption, adding that lamb dishes were being offered in luxury hotels and restaurants.

The PVO is tapping culinary arts students to help come up with lamb menus, he said.

During the cooking demo, dishes prepared included Lamb Shanks Canope with Tomato Salad, Lamb Meatballs in Polenta with Tomato and Black Olives Vinaigrette, Couscous Salad with Lam Gozilash and Lamb Loin Chops.

The chefs offered these dishes for public tasting. (PNA/PN)
